First of all, take a large bowl, cream together room temperature butter and sugar (if mixed with a whisk – on medium speed) until it becomes light and very creamy.
After creaming the butter well, add in two large eggs, one at a time, and mix until completely incorporated. After this, slowly mix in milk and lemon juice (if using stand mixer, mix it on low speed).
In a separate bowl, add flour, baking powder, salt, and zest of a lemon and stir together. Gradually add dry ingredients to the wet, and mix until just combined. Add a handful of raisins and mix everything once again.
