Curd Cheese Bars with Dried Fruit

You will need

  • 320 g shortbread cookies
  • 200 g sweetened condensed milk
  • 400 g curd cheese 15 per cent fat
  • 200 g butter
  • handful dried apricots
  • handful dried cranberries

Instructions

  1. Crumble or break the shortbread cookies into pieces of about 1 square centimetre (you can use a rolling pin). Set aside.

  2. Stiff room temperature butter with curd cheese. Add crumbled shortbread cookies and sweetened condensed milk. Mix it very well (no dry crumbles should be left).

  3. Put all dried fruits into a bowl and pour with some boiling water. Let it stay for couple of minutes until they become a bit softer. Add dried fruits into the mass.

  4. Add the mass into a container of the desired shape lined with plastic bag or place in a bag to form the desired shape. Compress well to avoid air gaps and let it sit for at least a few hours (preferably overnight in a cold place).

  5. Serve completely cool. Enjoy!
