„When you will bake some cookies for me?“, – I hear this question basically all the time he gets me wondering about the next recipe on my list. And I love it. For me, this means that they are worth asking for, worth eating, and the most importantly – worth waiting for 🙂 „So why not bake some cookies“, – think then to myself.

Personally, I love sugar cookies. For me, they are moist, not too sweet, and very easy make as well as to decorate. I would make them every time I think of them, but this time I wanted to try something new.

This recipe I found on Pinterest, first of all, got my attention because of the lovely picture. I saved it but never thought I would make it. Because you know – sugar cookies once again. But then we were heading to the store and I was wondering loudly in the car – what we should make as a dessert?

And then I heard it: „When you will make some cookies for me?“ 🙂 Fine, let‘s do it. The first recipe I saw was these „Ombré raspberry lemon sugar cookies“ by The Baker Chick.

How hard are these lemon sugar cookies to make? From the first glance, the recipe of these cookies is no different from a regular recipe of sugar cookies. I hope you will agree with me that there is nothing hard. Just add the ingredients, mix it well as well as knead it, cut out cookies and have them baked in the oven 🙂 the most difficult part for me is to grate the lemon peel, I do honestly hate it,m but I know that it is worth trying!

What about their flavor? The lemon sugar cookies are quite hard, I mean not soft, you feel it after your first bite. Also, there is a lot of lemon in the recipe, so you definitely feel it too. The thing I really loved is that the icing that is made from soft butter and cream cheese is soft and moist, you could never say that about the royal icing that we usually use.

Would I make them once again? Sure, St. Valentine’s day is just a couple of days ahead 🙂

What ingredient do you need to make lemon sugar cookies?

  1. All-purpose flour. You may want to sift them before using but this is not necessarily.
  2. Baking powder.
  3. Sugar. Have in mind that both cookies and icing will be sweet, so if you like, you can add less sugar then is written in the recipe.
  4. Butter (cold & cut into small chunks).
  5. Egg.
  6. Vanilla sugar.
  7. Lemon zest and juice.

How to make lemon sugar cookies?

First of all, preheat the oven to 180C. In a small bowl stir the flour and baking powder together, set aside.

In a large mixing bowl add the sugar and lemon zest. Add the butter, and use an electric mixer to cream until fluffy. Add the egg, vanilla sugar, and lemon juice and mix until creamy. Add the flour mixture and mix at low speed until combined. The dough will be crumbly and separated.

Turn dough onto a floured table or other surface and knead until the dough comes together. Roll dough to 1 cm thickness and cut out using (heart) cookie cutters. Line baking sheet with parchment paper and place cut-out cookies 2 cm apart from each other. Freeze in the fridge for 5-10 minutes before baking.

Bake each batch for 10-12 minutes. Allow to cool on the cookie sheet for 5 minutes and then move to a cooling rack.

What you will need for cream cheese frosting?

  1. Cream cheese (room temperature).
  2. Butter softened (room temperature).
  3. Powdered sugar.
  4. Food colouring. In the original recipe, the raspberry powder is used, but if you don’t have it, the food colouring will save the day as well 🙂

How to make cream cheese icing for these lemon sugar cookies?

Make sure that all ingredients are at room temperature. Cream together the cream cheese and butter with an electric mixer until smooth. Add lemon juice and the powdered sugar, one tablespoon at a time until fluffy and creamy. Let it freeze for 10-15 minutes in the fridge before decorating.

Add food colouring and decorate the first few cookies. Add a little more food colouring and decorate a few more, gradually adding more colouring to each batch, creating a gradually darker pink.

You will need

For the sugar cookies:

  • 200 g all-purpose flour plus for kneading
  • 1 teaspoon baking powder
  • 100 g sugar
  • 110 g butter cold & cut into small chunks
  • 1 egg
  • 1 tsp vanilla sugar
  • zest and juice of 0.5 lemon

For the Frosting:

  • 50 g cream cheese softened
  • 80 g tablespoons of butter softened
  • 5-6 tablespoons powdered sugar
  • food colouring
