You have to believe me: the first time I tried this vanilla cake, it was perfect! Soft, crispy, very moist and quite sweet, it matched well with the sweet-sour plum jam and the mild cream.

How to make perfect Vanilla Cake?

In order to start making this vanilla cake you have to sift the flour, baking powder, and salt into a medium bowl and whisk together. After, in the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, and vanilla on medium speed until light and fluffy.

Add the eggs, two at a time, beating until each of them is incorporated before adding the next. Scrape down the sides of the bowl with a spatula when necessary. Add the flour mixture in four parts, alternating with the milk in three parts, beating just until each addition is incorporated before adding the next. Be careful and do not over mix. You do not want to have this Vanilla cake too hard.

Preheat the oven to 170°C. Line the bottom of each cake pan with parchment paper. Scrape the batter into the prepared pan and spread it so that it is smooth in the pan. Bake until a toothpick inserted in the center comes out clean, about 40-45 minutes.

Tips and Tricks. While preparing, pay attention to these:

  • Use only room temperature ingredients. Take some time and grab eggs, butter and milk from refrigerator couple of hours before you are going to bake Vanilla Cake.
